Carl’s Roasted Beets

- 1 bunch beets with greens

- 3 cloves or 3 garlic scapes - minced

- 3 Tablespoons olive oil

- 2 Tablespoons balsamic vinegar

- salt and pepper to taste


(1)   Wash beets including greens.  Remove the greens and quarter the beets and coarsely chop the beet greens including the stems.

(2)   Place the roots and garlic in a baking dish and drizzle with olive oil and salt and pepper.

(3)   Roast in the oven at 400 degrees for 40 minutes turning occasionally

(4)   Add the beet greens with stems and reduce heat to 325 – cook for 15 minutes until the greens are wilted – Toss with balsamic vinegar and serve
