Roasted Leeks (Compliments from Sylvestre Dion and George DuBose)

(1) Chop Leeks into 1/4 inch pieces then toss with olive oil, salt and pepper. Bake in a casserole dish at 425 until tender about 15 minutes. You may consider sprinkling cheese over the leeks for a cheesy oniony flavor!
