Napa Slaw Salad

 

SALAD:

            1 head Napa Cabbage

            1/2 c. olive oil

            12 oz thin spaghetti/udon noodles – precooked OR Asian Rice Noodles -uncooked

2 Tablespoons sesame seeds

            1/2 c sliced almonds

            1/4 c chopped scallions/bunching onions

           

 

DRESSING:

            1/4 c honey

            1/4  c. rice vinegar

            1/2 c. olive oil

            1 clove garlic

            2 Tablespoons Soy Sauce

 

  1. Chop Napa cabbage very thin and place into a large serving bowl
  2. Heat oil.  Add almonds, sesame seeds, scallions and noodles.   Brown slightly.  Add to Napa Cabbage.
  3. Combine all dressing ingredients; mix well and pour over Napa Cabbage & stir to coat all ingredients. 
  4. Serve immediately.
