Eva's Fresh Pepper and Cucumber Salad
This is incredibly easy and refreshing using the abundance of peppers in your CSA share!


2 Sweet Peppers

6 Tablespoons of Olive Oil

2 tomatoes

salt and pepper

1 English Cucumber

3 tablespoons of Red Wine Vinegar

2 tablespoons of IItalian Flat Leaf Parsley










1 Make the Salad:   Dice the peppers, tomatoes and cucumbers into  1/2 inch cubes. Chop 2 tablespoons of parsley. Mix vegetables, season with salt and pepper, and sprinkle with parsley.

2 Make the Dressing and Combine with the salad:   Mix 6 tablespoons of olive oil with 3 tablespoons of red wine vinegar. Add vinaigrette to the vegetables, mix, and let sit to marinade for 15 minutes. Mix again before serving.
