Garlic Roasted Potatoes

 Basil vinegar is a tasty vinegar for dressing a salad, and will also work well with boiled vegetables, grilled meats, and fish.

- 1 pound of potatoes – cut into 1 inch pieces or leave whole depending on the size

- 1/2 cup water

- 1/8 cup lemon juice

- 2 cloves garlic - minced

- 1 teaspoon salt

- 1/2 teaspoon pepper

- 2 teaspoons of oregano, rosemary or parsley - minced

1)      Mix water, lemon juice, garlic, salt, pepper and parsley. 

2)      Toss ingredients together and roast in a 400 degree oven until potatoes are tender about 35 minutes.
