Summer Squash and Basil/Feta Gratin

 

2 lbs of summer squash cut into 1/4 inch bite size pieces

Salt and Freshly ground pepper to taste

4 eggs

4 ounces of feta cheese

1 c. basil

3 cloves of garlic

pinch of grated nutmeg

 

1.      Preheat the oven to 375 degrees.  Oil a 13 X 9 casserole dish with olive oil.

2.      Steam the sliced summer squash for 5 minutes.  Refresh with cold water and drain on paper towels.  Transfer to the gratin dish and toss with salt and pepper. 

3.      Blend together the eggs and cheese in a food processor/blender.  Add the basil and garlic and continue blending until smooth.  Add grated nutmeg and blend until mixed thoroughly.  Pour mixture over summer squash.

4.      Bake 30 – 40 minutes until set and just beginning to brown on the top.  Serve hot, warm or at room temperature.
