WINTER SQUASH AND APPLE SOUP

 

Preparation Time:  20 minutes

Cooking time:  20 minutes

Serves:  12

 

 

1        Medium Butternut Squash,           Parboil pieces of squash and peel.

Cut into pieces                                Combine all ingredients except         

4        Tart Green Apples, peeled,            parsley in a large saucepan and

Cored, and chopped                bring to a boil.  Simmer until tender.

4        Cups Chicken Broth

1        Cup Fresh Bread Crumbs           Puree batches of mixture in a blender

1        Medium Onion, chopped          or food processor.  Check seasonings.

½   Teaspoon Dried Rosemary                  

½   Teaspoon Dried Marjoram                   Cover and refrigerate.  Can be frozen

      Salt and Pepper to taste                            in batches and thawed overnight.      

      Fresh Parsley, minced                                    Garnish with fresh parsley and serve hot.
